Murungaikkai Poricha Kuzambu (Drumstick fried curry)

Ingredients :-

Drumstick - 2 nos
Small onions - 5 nos
Grated coconut - 2 table spoons
Fennel seeds - 1 teaspoon
Dry chilies  - 8
Coriander seeds  - 2 teaspoons
Turmeric powder - 1/4 teaspoon

For seasoning...
Oil - 2 table spoons
Mustard seeds- 1/2 Teaspoon
Urad dal - 1/2 Teaspoon
Curry leaves - 10 nos

Method :-

Slice the onions.

Cut the drumstick into 2 inch pieces.

Dry roast chillies, coriander and fennel seeds and grind with coconut.

Heat oil in a pan, and add the seasoning.

Add onion slices and drumstick pieces one by one and fry for a minute.

Add the ground masala with enough water.

Allow the mixture to boil for 5 more minutes and when the gravy becomes thick, remove it from the fire and serve hot with rice and papad.

Mix Vegetable Kurma

Ingredients :-

Potato( small) - 2

Onion - 1

Green chilies - 2

Tomato(big) - 1

Capsicum -1

Beans - 15

Carrot -1

Green Peas- 1 cup

Turmeric Powder - 1/2 Teaspoon

Chili Powder - 1 Teaspoon

Garam masala - 1/2 Teaspoon.

Ginger Garlic paste - 1 Teaspoon.

For grinding...

Grated coconut -1 cup

fennel seeds -1 teaspoon

cashew -2


For Seasoning...

Cinnamon- 1 inch

Cloves - 2

Curry Leaves - 10

Method :- 

Grind the coconut with fennel seeds and cashew and keep aside.

Cut the vegetables into small pieces.

Heat Oil in a pan and season with cinnamon, cloves and curry leaves.

Add Onion and green chilies.

When Onion became translucent add the ginger garlic paste, and saute for a while.

Then, Add potato and saute for three minutes.

After that, add the remaining vegetables and saute.

Add enough water and allow the vegetables to cook.

Finally, add the coconut mix and the masala powders. 

Adjust the salt.

Cover the pan and cook for another five minutes in low flame.

 Garnish with coriander leaves and serve hot with roties or parathas.

Easy chana masala (Kadalai Curry)

Ingredients

Black chana (Soaked overnight) - 1 cup
Tomato - 1
Onion - 1
Green chillies - 2
Chilli powder - 1 teaspoon
Grated coconut -2 tablespoon
Coriander powder - 1 teaspoon
Turmeric powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Ginger - 1/2 inch piece
Garlic - 3 cloves
Coriander leaves ( chopped) - 1 table spoon
Oil- 3 teaspoons
Salt to taste
Method

1. Pressure cook the chana.
2. Grind all the ingredients except chana with enough water to make a paste.
3. Heat oil in a pan and season with cinnamon and cloves.
4. Add the masala to the above seasoning and saute till the oil separates.
5. Mix the cooked chana with this mixture.
6. Add 1/2 a cup of water and salt to taste and cook for 5 mins.
7.Garnish with coriander leaves and serve hot.
